[01/06/2010] Use and features

The bread makers are loved by many housewives since they are extremely easy to use and produce tasty bread; in order to have great loaf, though, mixing the ingredients in the right sequence is extremely important – they are added in a specific order in a pan, which pan is then inserted in the bread maker. After that, the machine automatically mixes, kneads, and bakes the bread. The baking process usually takes a few hours time since the dough has to proof in the pan, however some models have fast-baking program that can bake a loaf in 45 minutes to an hour, but then the recipe has to be changed specifically for that function.

The shape of the loaf is determined by the shape of the pan and even though some older models bake the loaves vertically, the latest ones bake more traditionally looking bread. The sizes also vary, with 500g, 750g, and 1kg being the most common and most bread makers can bake either two or three different sizes of loaves. Apart from baking bread, the bread making machines are good for mixing dough for pizza, bans, pasta, croissants and some can even make jam. The latest models have automatic dispensers that add seeds, nuts, or fruit to the loaf during the baking process. Delay timers, which some bread makers have, allow the baking process to be postponed to more than ten hours and wake up to the smell of freshly baked bread. The bread makers require the use of recipes that have been specifically put together for such machines, but most models come with free recipe booklet in the box and many such recipes can be freely downloaded online.

The bread makers are ideal for baking white, whole grain, or French bread, but rye, corn, and other gluten-free breads don’t always come out as good, even though high-end machines have a gluten-free bread baking program. The home-baked bread also typically goes stale faster, unless preservatives are added to the mixture.  Older types of bread makers tend to leave a whole at the bottom of the loaf, which whole is made by the kneading paddle, but models with special collapsing paddles are available on the market as well. Operating a home bread making machine is quite easy and straightforward, although some come with many controls and options, which might make you reach for the manual quite often.
